China is encouraging its population to embrace the potato.
As the population grows and industrial development affects groundwater and land fertility, they can no longer grow as much rice internally and would need to rely on food imports from countries such as the USA (a major trading partner). Such reliance would not be acceptable so the potato is one solution. It can be grown in most soils and is healthy (although some Chinese remain to be convinced judging by the video below...)
