Butter madness

I've been writing about food quite a bit for the last three months for various projects. 

This is a story which I mentioned in something I wrote, which was interesting as it connected with how the Global Food Supply System (GFSS) works. Quite a lot of what I wrote had to be edited out for space, so there will be some food related posts coming (and other posts) which are making use of my research which ended up losing out in the editing process.

I was intrigued by this story about New Zealand and the rising price of butter despite the fact that New Zealand has a large dairy industry.

New Zealand is the world’s top dairy exporter, producing a third of the world’s dairy trade. 
The industry represents about $11.3bn or 3.2% of New Zealand’s GDP, and plays a significant role in regional economies.

There were some interesting things happening because of the rising prices including bulk purchases within communities and people going back to churning milk to make their own butter.
